  • 325g/1 1/2 cups castor sugar
  • 50g/ 2 tbsp. honey
  • 125g/ 1/3 cup liquid glucose
  • 60 ml water
  • 15g/ 3 tsp. bicarbonate of soda
  1. Line the base and the sides of a Swiss Roll pan with non-stick paper
  2. Place sugar, honey, glucose and water in a large saucepan (you need enough room to allow the mixture to rise to the top)
  3. Bring slowly to simmering point, making sure the sugar has dissolved
  4. Brush down any crystals on the side of the pot with a wet brush
  5. Increase the heat to medium and simmer briskly until it becomes golden brown
  6. Turn off the heat, whisk in the bicarbonate of soda and pour quickly into the prepared pan
  7. Set aside for 1-2 hours to set and cool, and then brake into pieces
  8. Dip in melted chocolate (optional)
  9. Store in a airtight container
